How to Make Red Velvet Cookies

Who doesn’t love Christmas red velvet cookies? If you have red velvet lovers in your home, you have to make them these cookies during the holidays. If you know my style, you know that I am all about easy and simple recipes. It is very rare you will find a long or complex one here. And while I certainly can appreciate the dedication it takes to make, this mama has her hands too full with two kiddos to attempt ha ha. 

Instructions

Preheat the oven to 350. In a medium bowl, stir together the olive oil and eggs until well blended. Add the cake mix and stir until the dough comes together.

Using a tablespoon, scoop the dough into one inch balls. Roll each of the balls in your hand then into the powdered sugar. Place on parchment paper lined baking sheet.

Bake 7 minutes, or until they are very lightly browned around the edges and the tops look dry. Let cool on the pan for 5-10 minutes before moving to a cooling rack to cool completely so they don’t fall apart. These render soft cookies.
