El día de los niños as a first time mom

I have vivid memories of my dear childhood in Mexico. From the walks on the malecon on beach to the raspados by the theater of arts. They are so vivid, it astonishes me and nostalgia hits me. Mexico has such rich culture that I intend on passing on to my son. One of those special days is El día de los niños on April 30th.

El día de los niños is a day to celebrate children and shower them with treats and special festivales (festivals.) It goes as far as the early 20s. Schools prepare in advance, the food, the candy, treats, pinatas, music, concerts and contests. Children are sent to school often in brand new clothes to be made feel special. Many often also organize a toy drive to give to the less fortunate to that they can be made special as well. I loved this day not only because it had a new dress and had a blast in school but because afterwards my mother treated my sister and I. She would take us out to eat ice cream. Yum!

How I plan to pass it down to my son

While, I no longer live in Mexico, it ks important that I pass down these sweet traditions. Last year, my son was 5 months old and I was too overwhelmed. I plan on making it up this year! I am going to have a new outfit ready. And while he doesn’t go to school yet, I intend on making the entire day special! We will start by making his favorite, banana-cheerios mini pancakes (see recipe below.) Then just like my mama used to when I was a child, treat baby to ice cream or frozen yogurt after dinner. I am really looking forward to it!

Super easy and delicious banana and cheerios pancakes for kids.

Cheerios-Banana mini Pancakes! Super easy!

Ingredients

2 eggs

1 ripe banana

1/4 cup of Cheerios (original or honey nut) I use honey nut

Step by step instructions

1. In a bowl, whisk the egg and banana with a fork until fully blended.

2. Heat up a non stick pan to medium heat. Add butter.

3. Crush the Cheerios in a zip bag.

4.  Pour the egg and banana mixture into the pan.

5. Add immediately after, your main ingredient, the crushed Cheerios!

6. Flip over with a spatula after a minute. Wait another minute and remove.

7. Repeat until all mixture is gone!

Once they are done, I sprinkle a little bit of powdered sugar and fresh strawberries (my sons favorite) on top. Not only does he love the sweetness but the texture of the delicious Cheerios!
