Classic bruschetta featuring NatureSweet Eclipses

I am very conscious of what I feed my family. I strive to do my research to provide the best quality I can find that will benefit us now, in the future without sacrificing taste. So when the best-selling tomato maker, NatureSweet introduced a brand new tomatoes, I was all ears! First of all our little son loves tomatoes! We use them in so many weekly meals, it’s almost the first thing I grab at the grocery store. I am going to tell you what’s so great about the new NatureSweet Eclipses and how I love to incorporate them in my super easy and classic bruschetta (recipe below.)

The Eclipse tomatoes is grown and picked carefully at a greenhouse at the perfect time to provide a bold, rich, deep flavor. It’s easy to spot with a unique darker shade of red and larger in size. Only with NatureSweet Eclipses, you will see them use the best seeds and nurture them until reaching the ultimate stage of peekness of sweet. Here is one of my favorite ways I incorporate them:

Classic and easy bruschetta

1 baguette or bread of choice

4 NatureSweet Eclipses diced

1/4 cup of chopped onion

1/2 cup of chopped, fresh basil

1/4 cup of balsamic vinegar

Tablespoon of extra virgin olive oil

Salt to taste

Instructions

1. Brush olive oil to slices of baguette or bread of choice.

2. Broil slices of bread for 3 minutes

3. Mix diced NatureSweet Eclipses tomatoes, onion, and basil with balsamic vinegar and olive oil. Add salt.

4. Scoop mixture and place on top of sliced bread.
