Spring Vibes

Spread the love

Photography by Jill Shaw.

We have about two months left of Spring my friends. That means plenty of sunshine, water activities and florals everywhere. Right now is the time to think of warm colors such as orange, pinks, yellow and whites! Leave dark colors for fall and winter. If you live in the south the less layers of clothing the better. Right now, light loose fabric is trendy. This dress is a perfect transition to summer as well. It is a BCBG dress pair with Francesca wedges however I found similar for you below. Now go soak up the sunshine!

How to spice up everyday dinners with Dona Maria

Spread the love

Rolled Taquitos with Dona Maria Mole

As a mom to a very active toddler, making delicious meals for my family in a timely manner is what I strive for. My wife comes home hungry, and my son is racing the time before it’s time for bed (he’s an early bird.) So today I will share with you how DOÑA MARÍA® Mole saves my dinners regularly and efficiently.

Rolled Taquitos en mole

Ingredients (Serves 2)

Half a cup of extra virgin olive oil

8 tortillas

Half a cup of shredded cooked chicken

1/4 cup of Monterrey jack cheese

1 tomato diced

1/4 lettuce chopped

Media crema to taste

1 lime

8 toothpicks

Step by step instructions

1. Warm up the tortillas in the microwave for 1 minute, 30 seconds.

2. Warm up oil in a deep-frying pan to medium heat.

3. Insert chicken in a tortilla then roll it up. Push a toothpick through the center to hold it together.

4. Insert in warm frying pan.

5. Repeat the same for the next 7 taquitos. If you’re having a hard time rolling the tortilla, warm it up a little bit longer. It should feel a little sticky however it makes it easier to mold.

5. Once the taquitos are golden, brown removes and place in a plate on top og a clean paper towel to allow the excess oil to drain.

6. Arrange 4 taquitos in a plate and pour cooked Dona Mole over the top until covered.

7. Add media creme as desired.

8. Add diced tomatoes on top.

9. Add chopped lettuce on top.

10. Add cheese on top.

11. Splash a little bit of lime and you’re ready to serve!

You can see how I make it in the video below.

There are so many ways to use DOÑA MARÍA® Mole to your everyday meals like on enchiladas, tostadas, tacos, wings etc. Check out HERE  for more recipe and ideas.

El día de los niños as a first time mom

Spread the love

I have vivid memories of my dear childhood in Mexico. From the walks on the malecon on beach to the raspados by the theater of arts. They are so vivid, it astonishes me and nostalgia hits me. Mexico has such rich culture that I intend on passing on to my son. One of those special days is El día de los niños on April 30th.

Dia de los ninos, my childhood

El día de los niños is a day to celebrate children and shower them with treats and special festivales (festivals.) It goes as far as the early 20s. Schools prepare in advance, the food, the candy, treats, pinatas, music, concerts and contests. Children are sent to school often in brand new clothes to be made feel special. Many often also organize a toy drive to give to the less fortunate to that they can be made special as well. I loved this day not only because it had a new dress and had a blast in school but because afterwards my mother treated my sister and I. She would take us out to eat ice cream. Yum!

How I plan to pass it down to my son

While, I no longer live in Mexico, it ks important that I pass down these sweet traditions. Last year, my son was 5 months old and I was too overwhelmed. I plan on making it up this year! I am going to have a new outfit ready. And while he doesn’t go to school yet, I intend on making the entire day special! We will start by making his favorite, banana-cheerios mini pancakes (see recipe below.) Then just like my mama used to when I was a child, treat baby to ice cream or frozen yogurt after dinner. I am really looking forward to it!

Super easy and delicious banana and cheerios pancakes for kids.

Cheerios-Banana mini Pancakes! Super easy!

2 eggs

1 ripe banana

1/4 cup of Cheerios (original or honey nut) I use honey nut

Step by step instructions

1. In a bowl, whisk the egg and banana with a fork until fully blended.

2. Heat up a non stick pan to medium heat. Add butter.

3. Crush the Cheerios in a zip bag.

4.  Pour the egg and banana mixture into the pan.

5. Add immediately after, your main ingredient, the crushed Cheerios!

6. Flip over with a spatula after a minute. Wait another minute and remove.

7. Repeat until all mixture is gone!

8. You can also watch how to make it below.

Once they are done, I sprinkle a little bit of powdered sugar and fresh strawberries (my sons favorite) on top. Not only does he love the sweetness but the texture of the delicious Cheerios! Give it a try and tell me what you think! F.Y.I you can absolutely also make this with your favorite pancake batter as long as you had the main ingredients, our beloved Cheerios. Enjoy!
